Allow me to get scientific...

The color of a substance is not defined by the colors it absorbs, but the colors it reflects.

black absorbs all colors, so that it reflects nothing, therefore leaving an absence of color.

White, on the other hand, reflects all colors, which is why it is not as easily affected by heat and light rays.
