I know of sweet bean paste buns, but I don't know how to make them. They are good though. *sigh* I miss the little asian store that used to be near by that I bought them from.
Um...Pocky... but that really isn't something you make.. just kindof buy and munch.
Hmm.....they also have a really good way of preparing sweet potatos, but I don't know how to make it. I tried it at a store a bit of a drive away from me once....

I think the best advice would be to look for a japanese cookbook and go from there.

Mochi is Japanese and it's my favourite desert ever. There's a recipe here. Not sure how well it'll work, though... I've never tried making it myself.

If it doesn't need to be terribly authentic, make green tea ice cream.
Not entirely sure what the proportions are, but you take partially melted vanilla ice cream and add that japanese green tea powder, then stir until well mixed. It should be light green in color.
