If you have a fascination for idols, look up "Love Live".
Finished the entire "School Idol Project" and "Sunshine" story arcs---they each have two seasons and a follow up movie. So I'm giving myself an indefinite break before moving on to Nijigasaki and Superstar, although I'll give them time before they each release Season 2 and have their episodes English-dubbed.
IDK, I've been getting into "Love Live" lately because of their beautiful songs and story arcs. heart

Freiren is a fairly recent one. Also noticed someone said Delicious in Dungeon, which is a great relaxing watch with rich world building, and fun characters.

Same, I'll read through this post and similar looking ones.
My few suggestions (imo top5) recommend
#1 and kinda already cheating---
I'm kinda suggesting the creators tbh...
Naoki Urasawa, their work no matter the yr he sets it in, is a very elaborate mystery. The writer purposely will create a mash of questions like a ball of thread and slowly, very slowly it all unravels and makes sense!
He has done historical based scenarios as well as future tech-- always exploring the space/time but keeping his thrilling adventure for (Character) within a well muted tone of atmosphere that makes it feel like a full story, not necessarily a [all about the main character] it'll teeter off into another person's life and somehow ropes it in finely to the overall world.
Tldr;;; monster, pluto, master Keaton, 20th century boys, followed by 21st century boys [short follow up manga]

I would recommend Dororo and Black Jack. Also Cowboy Bebop and Inuyasha if you haven't seen those yet.

My personal favs are:
Solo Leveling: Read the whole manga and got so excited for the anime. Fast paced, action heavy, amazing ar, and the characters are compelling. Also the voice acting is a thing of beauty.
Apothecary Diaries: The storytelling here is amazing, art too
Frieren: cozy and heartwarming. Same amazing art and story
I loooove Bleach. The new 1000 year blood war arc came out on WCOfun.net
Kanji no. 8: I’m not a fan of dumb main characters, but this one is actually amazing
Food in Dungeon: it’s just really good
The Saints Magic Power is Omnipotent: Sweet organic romance with a kick of otherworld monster hunting. The most recent season has them humming a lot to save on the budget though, which is kinda odd.
Reincarnated as a vending machine made me laugh so hard
So I’m a Spider, so what!? Also really funny
Reincarnated as a Slime: The smash hit that kicked off the two above this.
Re:Monster is the funniest sarcastic commentary of Isekai tropes I’ve ever seen.
Chainsaw Man: very gory, dark humor
Blood+ made an impression on me in high school
Trinity Blood, loved in high school. It’s post apocalypse vampires
Fullmetal Alchemist: it’s just good.
Trigun: really good, but ancient. Don’t watch the remake it’s awful.
MHA is pretty decent, recent season is weird though and it feels like the author is a bad hand at character development. The MC is kinda all over the place and hard to like.
Parasite: it’s like Venom, but not.
Spy Family: Very cute
The Sacred Blacksmith : decent filler anime when you’re between shows.
I can’t think of others off the top of my head though.
