CHICKEN CAPRESE

INGREDIENTS
4 boneless, skinless chicken breast halves (about 1-1/4 lb.)
1 Tbsp. olive oil
1/2 cup onion, finely chopped
1 large tomato, finely chopped
1 tub Knorr® Homestyle Stock - Chicken
3/4 cup water
1/2 cup small cubes mozzarella cheese(about 2 oz.)
2 Tbsp. thinly sliced fresh basil leaves
DIRECTIONS
Heat oil in 12-inch nonstick skillet over medium high heat and cook chicken, turning once, 3 minutes.
Stir in onion and tomato and cook, stirring occasionally, until onion is tender, about 3 minutes.
Add water and Knorr® Homestyle Stock - Chicken to skillet and stir until Stock is melted. Bring to a boil over high heat. Reduce heat to low and simmer until chicken is thoroughly cooked, about about 3 minutes. Arrange chicken on serving platter.
Stir in cheese and basil and cook until cheese begins to melt, about 1 minute. Serve sauce over chicken.

Taco Stuffed Shells

** Just a nice twist on the traditional Italian Stuffed shells. Hope you enjoy them too!
The Green onions indeed add color as well as extra flavor.
You can also add other taco favorites and create / add to this Dish.

Ingredients:


1lb ground beef
1 package taco seasoning
1 4 once package cream cheese
12 large pasta shells
1 cup salsa
1 cup taco sauce
1 cup cheddar cheese (shredded)
1 cup Monterey jack cheese (shredded)
1 ½ cups tortilla chips (crushed)
3 green onions (chopped)
1 cup sour cream

Cooking Instructions:

Step 1: In a fry pan cook ground beef and add taco seasoning and prepare according to package directions. Add cream cheese cover and simmer until cheese is melted. Blend well. Set aside and allow to fully cool. While burger is cooking cook the pasta shells, drain and toss well with butter.
Step 2: Pour salsa in the bottom of a 9 x 13 inch baking dish.
Step 3: Stuff each shell with the meat mixture. Place the stuffed shells in the baking dish and cover the tops of the shells with taco sauce.
Step 4: Cover and bake in the oven at 350 degrees for 30 minutes.
Step 5: After 30 minutes, uncover, and sprinkle crushed chips and shredded cheddar and Monterey jack cheeses on top. Cook for about 15 more minutes. Serve with sour cream, additional salsa, black olives or whatever you think goes good with tacos!

Southern Style Smoked Sausage and Potatoes

gaia_spoons 1 package of smoked sausage
gaia_spoons 1 large onion, peeled and chopped
gaia_spoons 5 large potatoes, peeled, chopped, and cut into 1/2 inch cubes
gaia_spoons olive oil
gaia_spoons salt
gaia_spoons paprika
gaia_spoons dried thyme
gaia_spoons strong grated cheddar or mozzarella cheese (either or both work)

Preheat the oven to 200*C/400*F/ gas mark 6. Line a large baking tray (with sides) with several sheets of foil, and drizzle with a bit of oil. Spread the oil out over the pan. Set aside.

Put the sausage rounds, onions and potatoes into a large bowl. Drizzle with a couple TBS of olive oil and season to taste with salt, pepper, paprika and dried thyme. Toss together with your hands until everything is evenly distributed. Pour this out onto the baking tray, and spread it out as much as you can.

Place into the heated oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender. Turn off the oven. Scatter the cheese over top of the cooked meat and potatoes, Pop back into the oven a few minutes to melt the cheese. Serve immediately.

gaia_star This is easy, cheap, can be doubled easily for larger dinners or potlucks, and my family can't get enough of this stuff.
