Sophie's Meal Log and Recipe Thread :3

heart Greetings Insomnia~! I saw that you had a new health and fitness subforum and I was really keen to share some of the recipes I've been using.

I recently moved out of my parents' house (well, like, literally 5 days ago...lol) which means my roommates and I have been cooking all of our own meals! We're all into organic eating and healthy cooking with low-fat materials and aren't really big meat-eaters. So for all you veggie-heads out there this is definitely the thread for you if you're into fast, easy meals big on the fruits and vegetables. :3 Keep reading if you're still interested. And I would LOVE feedback and suggestions! heart

where to buy ingredients;;
some recommendations on where to find some of the ingredients i have listed.
cheese_whine for veggies: if you live in the city, hit up one of those vegetable vendors on the street! it's really likely that they're cheaper there than at the grocery store, plus you're helping a small business. if some of the fruits and veg from a street vendor dont look fresh, try and find the freshest ones, and if you're still at a loss, just go to the grocery store and weigh them out at the scale. :3 If you live in the suburbs, go to a flea market or just a grocery store. if you're into super-organic fruits and veggies, whole foods stores are where it's at.
cheese_whine bulk foods (like black beans or shelled peanuts): whole foods stores all the way! you just need to fill up a bag then weigh it on the scale. most stuff you buy in bulk is more cheap and better quality than buying it in a box. canned black and pinto beans can be bought at a regular grocery store for even cheaper, but it's fun to soak your own beans for an extra 75 cents or so. ^____^ they also taste significantly more fresh when bought in bulk opposed to have sat in an aluminum can of juice.

cheese_whine spices: any grocery store. in a lot of our recipes we use cayenne which is some kind of spicey indian jawnsky but it's mad good in mexican food, which we've been eating a lot of because it's fast and easy. Garlic and ginger can be bought from a regular grocery store.

cheese_whine tofu, rice milk, soy milk, etc: whole food stores. grocery stores have it too but it's shittier quality. plus it's cheaper to buy by the pound at whole foods than in a package at regular grocery stores.

cheese_whine anything i missed, please ask and I'll modify the list!

recipes!

quesedillas
ingredients: black beans, mexican cheese, medium-sized tortillas (whole wheat or white to suit your taste), green peppers, little bit of onion, olive oil.

chop up the onion and green peppers.

if you buy the black beans in bulk, soak them ahead of time; if they come canned, then you dont need to. to soak black beans put them in water overnight, they'll, like, do this inflating thing. in the morning put them on low heat for an hour and a half or until squishy and edible.

put olive oil in the bottom of a frying pan (or butter if you must, you unhealthy little gremlins! xD ) sunflower oil or vegetable oil works too. or peanut oil. anything to lube up the bottom of the pan. then put your chopped onion and pepper in the pan and sautee them until theyre cooked and not really crunchy anymore. after that, add some black beans - it should be 2/3 black beans and 1/3 other veggies. sautee for another minute or two, then turn off the stove. put it in a bowl and wash out the frying pan.

next part! put more oil or whatever in your pan, then put the heat on reaaaaalllly low and put one tortilla wrap in your pan. put the veggies and beans on it and spread them evenly, then add cheese. put a little olive oil on the outside of your other tortilla and put it on top. when the cheese melts a reasonable amount, flip it to let the other side get a little brown.

cut into slices and serve! :3 they work good as leftovers too but are definitely best served warm.

User Image ok, I've never put beans in a quesadilla before (usually I like onions and mushrooms in them), but I love black beans. I'm totally gonna do that the next time I can emotion_awesome User Image

Banana-Cocoa Protein Shake

You will need:

- A frozen Banana
- A cup of Skim Milk (organic preferably)
- A table spoon of Unsweetened Cocoa
- half a table spoon of Cinnamon
- Two table spoons of Flax Seed
- A shot of Whey Protein (optional but I would still recommend it)
- A Blender or Food Processor

This is all pretty straight forward. The most important part is the banana. Make sure when you peel your Banana, it has a few black spots on it so it'll be nice and sweet. Throw it in a zip lock bag, and then throw it in your freezer for the night. In the morning it should be nice and hard (rofl). Break the Banana into four separate chunks into your blender, adding the rest of your ingredients in the order I posted them in.

My blender is pretty old so it takes a minute to blend everything, but if you have a good blender it should only take about a minute. If you did everything right, the shake will be a nice pale color. It'll be thick, frosty, and f'ing delicious. Enjoy starting off your day the right way!
