How much happiness goes up or down in one day is based on a variety of factors that have to do with the preferences of your fish. Changing the water temperature and music might actually make your fish unhappy. If you have a variety of fish you may not be able to set the temperature and such to ensure that all fish gain the maximum happiness but you should be able to find some kind of medium that at least all your fish don't hate (unless you have extreme opposite varieties of fish). Adding decorations makes happiness go up (or down) a small amount per decoration so the more you have the more happiness will go up (or down) in one day. If you're not around every day to feed your fish (feeding them once per day is ideal) then having a crapton of decorations may not be a good idea.
Otherwise, once you have settings that your fish are happy with, you just have to be patient and feed them daily. Happiness is not going to reach 100 overnight. It takes time just like with real pets.
