In my opinion, guilds are enjoyable because they're almost like a mini Gaia. They're much more complex then just a forum, for several reasons:
1) You can create several different topics, all falling under different categories, and keep them together and more organized instead of worrying about things like 'bumping' in the thread to keep it on the first page.
2) You can add members and specify privileges for those members and other people who haven't joined yet. For example, people on the crew also have the ability to control some of the things that go on, all depending on the captain(or guild creator and/or leader)'s preferences. So several other people have some authority and say on how the guild can be changed/what the members are allowed to do. Kinda like admins and admin leads.
3) It allows you to hold contests and events while keeping things organized and controlled. Like I said, guilds can be like a mini gaia, or just a mini website in general. Take this one for example ^o^ We have a set goal, but there are several ways that we try to address and accomplish that goal, all in a fun and organized manner.
Finding a guild that suits you isn't as hard as it may seem. It could be as simple as going to the main guild page, typing in a few keywords, specifying the type of guild, and clicking that tempting search button! But thats not the only way.
Sometimes people advertise their own guilds in their signatures -- take mine, for example. If you hover your mouse over my crew badge, you'll see that it hyperlinks somewhere, and that mysterious place just happens to be the NSTG biggrin If you browse around forums or users that mention your interests, you might find something similar.
There are also Featured Guilds. One guild in particular may be mentioned on gaia's 'home' page -- just scroll down and look toward the left, where it says 'spotlight'. On the main guild page, there are several popular guilds listed. Ours is one of them ^o^
If you still can't find what you're looking for, you can always create your own! Just go here! Just remember, creating a guild costs 20,000 gold, and it might get a little tough managing what ever you create. Being the leader of a guild is a big responsibility, after all! Whether it's big or small, you are the one in charge of what goes on inside. Just ask Kitty or Ebony! I'm sure they'd tell you the same thing.

The Zexy Log pretty much said everything but I wanted to expand on the "mini Gaia" concept. I interpret the "mini Gaia" concept to be a "small community feeling." That's the main reason for why I like guilds. (Sorry, I type a lot, but the concept is simple. Guilds = small community and more control over topics of interest.)
The Zexy Log listed many advantages to guilds. Some more include:
> Smaller memberlist equals more of a small community feeling. You come to know and recognize everyone when you see the same few people post over and over.
> Guilds can be tailored so that people with the same sort of interests can find each other and talk about the things they want to. Does Gaia not have a main forum dedicated to X Topic? Does Gaia not have a place where people can talk about X Topic? Would it be helpful if certain threads were located all in one place? Do you have a large thread in the main forum full of regular posters, but those people would like to go off-topic and create more threads for organization? Then going to a guild format is a good idea.
Activity Level is also a point to consider. Gaia's main forums and guilds all range from being nearly dead to so active that you can't keep up with the conversation.

If you like really active and fast conversations, the active main forums might be better for you. Heck, even Rally, Towns or zOMG might be good since you'd find a lot of people in one place (though it'd probably be hard to carry a conversation in the virtual spaces).
There are some active guilds out there, but you'll have to search for them.
The popular guilds list is a good way to find active guilds. http://www.gaiaonline.com/guilds/ However, it's not always an indication of an active guild. The NSTG is on the popular list, but it's not highly active. Don't get me wrong, the NSTG is a great guild and I really like it. Heck, it's one of the most active guilds that I belong to. However, people visit at various times throughout the day. So, for the most part, you'll rarely see more than three people posting in the guild at one time unless there's some special event.
As to your specific questions:
1. What makes a guild so enjoyable is when you find a guild that's right for you. ;D When you find the right guild for you, you'll enjoy posting in it and chatting with the other users. You won't wonder why it's enjoyable. ^^
2. You'll find the right guild for you by trial and error.
Use The Zexy Log's suggestions to help narrow down your search. Join guilds that you think will be right. Stick around for a while. Post and try to interact with your fellow guild members. Are the existing members mean and cliquey? Is it too unorganized? Is it too slow? Do you just not feel welcome in general? Then try another guild until you find one that you click with. If you can find a place where you enjoy posting and the people don't annoy you, good. Find people that you click with? Even better. :}
You can also try your luck. Here's a method where you won't be narrowing it down by interest, but you'll be sure to find people who want you to join. ;3
Check the Charter and Barter forum. It's a forum where people can buy, sell and recruit for guilds. If you look at the recruiting threads, you'll be sure to find guilds that are just itching for new members to join. You should be welcomed right away. As to whether those guilds interest you... well... hopefully an interesting guild will be advertising. It's always fun to join a guild with a wave of new members. There's always a fresh excitement in the air~

I just wanted to pop my head in here and say that you guys have some excellent answers, and I just really wanted to show my strong agreement with this statement by Paradoxismminant. You see, in Gaia's main forums, the rules, in some ways, have to cater to the entire Gaia Online population. In other words, things like mean sarcasm, borderline flame-war arguments, and even roleplays that could almost be considered pornographic aren't always cracked down upon. And it's not because moderators aren't working hard; it's because there are so many instances in which these things, however unpleasant they may make your user experience, either don't get reported or aren't reportable. In guilds, we can have our own rules that stress mutual respect, understanding, and decency; we will never allow people to break into a dramatic argument here, or to start doing inappropriate things in a roleplay. Since crewmembers are constantly engaging -- at least in the NSTG -- in the affairs of our members (because we care about you guys), we're more likely to catch these things and take action against the person who committed them. |

Yeah, in the main forums there's often a lot of "tl;dr"-ing and other rudeness. In guilds you can ask people to be respectful--and if they're not, you can warn them courteously, and if needed, ban them. And such^^
