I've seen some Gaia members as wolves, cats, etc.
How do they get like this?

Easy, they do it through items. Check the market place for animal ears and tails, and see what you like.

When an avatar is an animal instead of the standardized avatar, the person has equipped an item to their avatar to make them into an animal.
Some examples of these items are:
-Herme's Moon
-Summoning Tomb
& so much more. 3nodding

Most of them are only available through the marketplace- most are EI's, event items, or MC's.

You would just look for any items that have an 'I Am --" pose in it, which will allow you to turn into an animal. There's many of them out there- Hermes and Mercurys moons, as mentioned before- Alrunas Rose can turn you into a succubus. Theres some skunk plushies, a cow item- lots to choose from, but a good many of them are quite expensive.

Also there are skins which can make you look like them.
