The Absinthe itself should be slightly bitter not sweet, but most people mix it with sugar and water. So if you were served absinthe that was too sweet, then the server or bartender put in too much sugar. It's supposed to be just enough to offset the bitterness. Many absinthe connoisseurs even have special perforated stirring spoons to dissolve the sugar quickly in their absinthe, called "Absinthe spoons":



And by the way.... Absinthe makes the heart grow fonder. wink

Yeah i know. Back in the days when i used to drink. We melted the sugar on the spoons and mixed it. I guess we probably put too much.
