Not quite 100% right, but close.
A great many things have crystal structures. Water for example has one, when it is in its solid state.
So basically, we can re-align anything on a molecular level to be in its 'perfect' state, and then control that state at will. Example, turning a lump of coal into a diamond dagger, then flinging it around. ~is totally boasting now~

Siiigh, you're right about the water's crystal state; however, I would think that a crystal bender would only be able to "fling it around" once it's actually in that state, not before.
