Simple Chocolate Pudding Recipe

NOTES:

- You have to bring the mixture to a boil when everything is mixed together - then lower the heat and add the extract. For some reason, the recipe seems to imply that you should leave it on low heat the entire time, and that... yeah, doesn't cut it.



VARIATIONS:

- You can use cocoa powder instead of chocolate.

- You can use vanilla bark instead of chocolate, to make vanilla pudding.

- The flavor is rather mature, so add more sugar if you like a "sweet" dessert.

- You can add mint extract or melted peppermint candies for a mint chocolate pudding.

- You can use canned milk (the kind that you dilute with water to make whole milk) and instead of using water, mix the can(s) of milk with cooled coffee. Use that and you will have chocolate mocha pudding.

=D Recipe thread~!

FUDGE

1 lb powdered sugar
1/2 cup cocoa
1 cube (1/4 lb) butter
1 dash of salt

1 cup milk

1/2 teaspoon vanilla
1/2 cup chopped walnuts (if desired)
1 cup marshmallows (if desired)



Place first five ingredients in a big bowl, microwave 1 1/2 to 2 minutes, or until the butter is almost totally melted.
Add next 2 to 3 ingredients and stir to blend.
Spread onto a wax paper lined (pie?) pan and place in freezer to cool.
Cut into little pieces when firm.

Makes a whole lot of chocolate.

Szen's Mediterranean Pasta >.>

Serves 2.

This was improvised so I didn't follow any recipe. I can only give estimates so put in as much of the ingredients as feels right to you. XD

1/2 box pasta shells, cooked
maybe 1/2 large can artichoke hearts, chopped
less than 1/2 can black olives (good olives would be better, but I bought what was cheap), sliced
I would have added a tomato if I'd had any, chopped
about 1/4 cup olive oil
a squirt of lemon juice
2-3 cloves garlic, minced
dried oregano
dried mint
black pepper
2 oz (?) feta cheese, crumbled

1. Toss the artichokes, olives and tomato with cooked pasta.

2. Combine oil and lemon juice. Stir in garlic, herbs and pepper. You could add salt if you want. We try to avoid adding any. My first choice would be fresh herbs, but all I had was cheap tubs of dried from the Middle Eastern grocer. Those are cheaper and better than the dried stuff in the big grocery store. 8D

3. Toss oil mixture with pasta and veggies. Then stir in the feta.

3.5 I think I might have sprinkled some parmesan cheese over it when I served it. I can't remember for sure.

4. Eat and make nom nom noises.

Because I just made some from a recipe I swiped from a friend's grandmother, and wanted to share.



Easy Fantasy Fudge.

Ingredients:

3/4 cup (1.5 sticks) of margarine or butter
3 cups of sugar
2/3 cup of evaporated milk
1 teaspoon of vanilla extract
1 package (12 or so ounces, I think?) of semi-sweet chocolate chips
I jar (7-7.5 ounces) of marshmallow fluff


Directions

-Grease a 13x9 or 9x9 pan
-Mix margarine/butter, sugar, and milk in 2.5-3 quart saucepan, and bring to rolling boil on medium heat, stirring constantly
-Continue boiling for 5 minutes on medium heat, or until a candy thermometer reads 234 degrees Fahrenheit; again, stir constantly
-Remove from heat. Ad chocolate chips, and stir until melted. Add remaining ingredients, and stir well
-Pour into pan and cool at room temperature. Cut into squares.

Greek Pita Sandwiches

1 cup shredded romaine lettuce
1 small tomato, chopped fine
1/2 cup diced cucumber
1 large scallion
1/2 red bell pepper, diced
1 oz crumbled feta cheese
4 black olives, pitted and sliced
1/2 T olive oil
1/2 T lemon juice
sea salt
black pepper
4 T hummus
2 whole wheat pitas

Mix all ingredients except hummus and pitas. Halve pitas and open to make pockets. Spread each pita with 2 T hummus and divide filling between the pockets.

Jeez, I'm on a roll lately!

Szen's Newly-Invented Breakfast Pita Sandwiches

2 eggs
1 whole pita, halved and split into pockets
1 green onion, diced
black olives, sliced
1 oz. feta cheese
dried parsley
dried cilantro
dried mint
black pepper

Spray pan with non-stick spray. Cook green onion for a minute or two. In the meantime, beat eggs with a little water, parsley, cilantro, mint, and black pepper. Pour over onion. Add black olives. Scramble. When eggs are set, crumble feta over top and mix in to melt. Put half of egg mixture in each pita half. Yum!

Dessert

Chocolate Biscuit Cake

Ingredients:

-300g dark/plain chocolate
-125g digestive biscuits
-4 oz butter (plus extra for greasing)
-2 tablespoons milk
-a large packet of white chocolate buttons

Directions:

1. Melt the chocolate and milk together in either a bowl over hot water or in the microwave.

2. Add the butter and mix until smooth. Leave it to cool, but don't let it solidify.

3. Break the digestive biscuits into small pieces and mix together with the white chocolate buttons.

4. Add the chocolate mix and make sure all the biscuit bits and white chocolate buttons are well coated.

5. Spoon the mixture into a 7''/18cm diameter cake tin that has been greased with a little butter.

6. Leave in the fridge to set for at least 3 hours.
