What does Polyjuice Potion do?:
What a Polyjuice Potion does is turn someone into what the last ingredient that was added into the polyjuice potion. But the potion only lasts for aproximately 1 hour, after that the person reverts back into themselves.

Willow walked into the potions class with her book, her hair looked so dark because of the lack of light in the room, the dust of the room was causing her to cough a little. Willow sat in the middle of the room and waited for the others to arrive

The professor raises an eye at the newcomer. He closes a book he is reading and walks to her desk swiftly and places his fingertips on her desk while looking down at her. "Miss Dawes, unless you've figured out some potion to bring you back in time, I do believe you're in the wrong class," he said stiffly, motioning to the third and fourth years surrounding her.

Willow looked around, she blushed and stood up
"So sorry, just came here this year! At my last school there was, so sorry! I-i was just getting confused!" Willow gathered all her stuff and left the room with her hair in a tizzy, she looked back on the professor and left the room
"I can't believe I did that!!" Willow though to herself as she stood outside the potions classroom

What does Polyjuice Potion do?: It transforms the drinker so they look exactly like someone else for one hour, provided that the potion maker can get a piece of that person (eg. hair) to put in said potion.
It cannot, however, be used to transform person into an animal, yielding rather disastrous results, which require professional medical treatment to undo.
(( Because apparently, even the Wizarding World is against Human-Animal hybrids. /political sarcasm ))
