A recipe fit for a king or queen

Username: Nuclear Noxi
Preferences: 10, 2, 9, 3, 4, 1, 5, 8, 6, 7, A, C, B

My festive recipe
Ingredients

▢ 1 cup unsweetened cocoa powder (100g)
▢ 1¾ cups granulated sugar (350g)
▢ ½ cup vegetable oil (120mL)
▢ 4 large eggs room temperature
▢ 2 teaspoons vanilla extract
▢ 2 cups all-purpose flour (240g)
▢ 2 teaspoons baking powder
▢ ¾ teaspoon salt
▢ 1 cup powdered sugar (120g)

Instructions

1. In a large mixing bowl using a hand mixer or the bowl of a stand mixer fitted with the paddle attachment, combine the sugar, cocoa powder, and oil. Beat on medium speed until well combined and shiny.
2. Add the eggs one at a time, beating until well combined. Beat in the vanilla.
3. Combine the flour, baking powder, and salt in a medium bowl, stirring to combine. Add the flour mixture to the cocoa mixture and mix on low speed just until combined.
4. Cover the dough in plastic wrap and refrigerate for at least 4 hours or up to overnight.
5. Once the dough has chilled, preheat oven to 350°F. Line two large baking sheets with parchment paper. Place the powdered sugar in a small bowl.
6. Using a small ice cream scoop or tablespoon, scoop the chilled dough and roll into roughly one-inch balls. Roll the dough balls in powdered sugar until well coated and place on the prepared baking sheet about 2 inches apart. (Only coat as many dough balls as you can fit on the baking sheets at one time. Refrigerate the remaining dough balls and roll in powdered sugar just before baking.)
7. Bake for 10 to 12 minutes or until the edges of the cookies are firm and the center is puffed but still appears slightly wet. Let them cool on the baking sheets for a few minutes then transfer to a wire rack to cool completely.

Lemon Meringue Pie

I have deviations from the original recipe since Meringues can be moody.

Filling
3 egg yolks (save the whites for the meringue)
1 1/2 cups sugar
1/3 cup plus 1 tablespoon cornstarch (instead of this use flour and double it. so 2/3 cup and 2tbsp
1 1/2 cups water
3 tablespoons butter
2 teaspoons grated lemon zest
1/2 cup lemon juice

Meringue
3 egg whites, room temperature
1/4 teaspoon cream of tartar
6tablespoons sugar
1/2 teaspoon vanilla

Preheat oven to 350

Put your sugar and flour togeter in a pot on the stove. Start pouring in the water gradually. It's going to look thin. Keep stirring and be patient until it start to get thicker. Then add your lemon juice (i always add a little more to taste) and your 3 egg yolks beaten. Keep stirring. You can add dye if you want. We made them grinch colored one year

Meanwhile put your egg yolks and cream of tartar in a mixer. Slowly stir in the sugar tsp at a time until all is in theree. Add your vanilla and keep mixing. It's ready when you can dip your fork in and pull it up, making a stiff peak of meringue. Keep this mixing till your filling is ready.

I used a plain graham cracker crust. I add the hot mixture to the pie shell, then gob on the meringue and smooth it around. Use your spoon to lift and make peaks all over the top. Make sure meringue seals in the whole filling. to get a good seal.

Cook in the oven until the meringue is browned to your liking.

You can tell it's made by me because I forgot to add the rice crispies and went "why are these peanut butter balls just FALLING APART????" But I'm fixing it. In progress shots are because they need to set in the fridge overnight!
