I'm aware of what the issue is, I just don't get why people complain about it with high caliber rounds. If a .408 round passes through you, you're dead, period. The same is with the .50, only, like you said, it gets dumped into the round since, like a watermelon, any limb that got shot with it would explode.

Well, if it's too high powered, and it's really small (like the wild cat Chey-Tac rounds, that are like .375 caliber) then it's actually NOT guaranteed kill.
.300 magnum rounds, that are wild cats of the .338 lapua, a lot of times are really accurate, but pass straight through a person.
The issue is that the round isn't heavy enough or large enough (large enough to slow down quickly when passing through a fluid) to impart enough energy while in the tissue.
