Strawberry shortcake

Servings 6
Ingredients:
6 cups sliced strawberries
1/2 cup Splenda granular or 1/2 cup other sugar substitute
1 cup low-fat biscuit mix
2 tablespoons low-fat biscuit mix
1/4 cup Splenda granular or 1/4 cup other sugar substitute
1/3 cup nonfat milk
2 tablespoons nonfat sour cream
fat-free whipped topping

Directions:
Preheat oven to 425 degrees.
Mash two cups of strawberries and add 1/2 SPLENDA Granular or other sugar substitute.
Mix in remaining strawberries.
Cover and refrigerate.
Blend baking mix and 1/4 cup SPLENDA Granular or other sugar substitute in a bowl.
Add milk and sour cream.
Mix until soft dough forms.
Drop batter by spoonfuls onto greased baking sheet to form 6 shortcakes.
Bake 7 to 9 minutes until golden brown.
Let stand 10 minutes.
Cut in half and layer strawberry sauce and whipped topping in middle.

DIABETIC ICE CREAM
5 eggs, beaten
1 can Carnation milk
Pinch of salt
Vanilla to taste
2 boxes sugar free instant pudding mix (vanilla)

Add Equal or Sweet 'N Low to desired sweetness. Add milk to fill freezer can. May also add pineapple, bananas, etc., or use chocolate pudding mix.

Garlic Shrimp



Ingredients
1 tablespoon olive oil
2 cloves garlic, peeled and thinly sliced
1/2 pound large raw shrimp (such as tiger shrimp), peeled
Freshly chopped parsley and 1 lemon, cut into 4 wedges, to garnish

Directions
Preheat the oven to 400 degrees F. Put the olive oil and garlic in a large, shallow ovenproof dish and heat in the oven for 2-3 minutes. You need to watch carefully so that the garlic does not start to brown.
Add the shrimp, and turn them in the hot oil until they are completely coated. Return them to the oven and bake for a further 3 minutes until they are pink and cooked through.
Serve immediately, sprinkled with freshly chopped parsley. Serve accompanied by lemon wedges for squeezing.

Pineapple Upside Down Cake - Weight Watchers

gaia_spoons 4 tablespoons unsalted butter, divided
gaia_spoons 1/4 cup brown sugar (can use sugar substitute such as a lesser amount of honey)
gaia_spoons about 7 canned pineapple slices (rings) in juice, reserve 1/4 cup juice
gaia_spoons 1 cup yellow cake mix
gaia_spoons 1 large egg
gaia_spoons 1/2 tsp vanilla

Preheat oven to 375˚F. Melt 2 tablespoons butter in a 9-inch round, flameproof, aluminum pan over medium-low heat, we used a cast iron pan (make sure to cover entire pan bottom); sprinkle brown sugar over top. Place pineapple rings in a single layer in bottom of pan. Increase heat to medium-high and cook until pineapple caramelizes, flipping once, about 2 minutes per side; remove pan from heat. Melt remaining 2 tablespoons butter on stove top or in microwave. In a medium-size mixing bowl, beat egg with remaining melted butter.

Add cake mix and reserved pineapple juice; combine well. Pour batter over pineapple; bake until a toothpick inserted in center of cake comes out clean, about 30 to 35 minutes. Allow cake to cool for about 15 to 20 minutes; when still warm, loosen sides with a knife and invert cake onto a serving plate. Slice into 10 pieces and serve.

~ Chicken Parmesan ~

Serve over whole grain angel hair and a side of vegetables to round out your meal.


Ingredients

1 1/2 cups marinara sauce, already prepared, jar or deli

1 1/4 pounds chicken breast, boneless and skinless

1 egg(s), large, beaten

1/2 cup bread crumbs, plain

1/4 cup parmesan cheese, grated

1/2 cups cheese, mozzarella, low fat, grated

1 1/2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon pepper, black, ground


Preparation

Preheat oven to 375 degrees. Coat a large casserole dish with cooking spray. Spread bread crumbs, garlic powder and black pepper out on a large plate and mix. Beat egg in a bowl for dipping the chicken. Place chicken between two pieces of plastic wrap and pound to 1/4 inch even thickness. Dip the chicken into egg and then bread crumbs, lightly coating both sides. Place chicken in casserole dish, spray tops with cooking spray and bake for 15 minutes or until cooked through. Top each piece of chicken with sauce, then mozzarella, then Parmesan. Place in oven and bake for another 5 minutes until cheese is melted and bubbly, then serve.
