From Raw, Simon Dean will jump, and from Smackdown, Hardcore Holly will go.

Orton will go from Raw. There is no way that a name such as JBL or Undertaker will leave Smackdown. The show just can't afford to lose them.
As for Shannon Moore, that guy needs a break. So does the whole damn cruiserweight division.

Yeah, the most charasmatic and powerful superstar that currently plays a big role on the show moves to RAW. It's just a simple fact that SmackDown is turning into a WWE version of Thunder. It's turning into a throw-away show as unfortunate as that is. Smackdown needs some serious drawing power, and main-event caliber persona's, and they need them now. Most of the guys capable of main-eventing and challenging for Smackdown's top title, (whatever it may be now that the WWE Championship is currently in the hands of a now Raw superstar) are already involved in storylines that are fairly set in stone and won't go anywhere for a while. I give the example of Rey Mysterio vs. Eddie Guerrero, Kurt Angle vs. Booker T, Big Show vs. Carlito. Eddie, Kurt, Book, and Big Show are all established Main eventers. The only ones left are Undertaker and JBL, pending the draft pick this coming Thursday.

I think Kane might go to SMACKDOWN and him and Undertaker will either feud or take over.

Not a chance. Kane won't leave RAW. The Edge/Lita/Kane thing is still to much of a major thing. Besides, now that Randy Orton is Smackdown, Taker's claimed for a fairly large program.
Now, I want it noted that I absolutely hate the fact that HHH wins the world title every other month. I think giving someone the belt ten (and probably more) times, only cheapens the title and shows desperation by the company. That being said, I want HHH to win the HiaC match against Batista at Vengeance. Here's why...
John Cena was drafted to Raw. This means that Smackdown has no major championship, and Raw has 2. This means one of two things. Either John Cena will lose the WWE Championship to either Christian or Jericho (not likely as Cena still needs to be established as a major champion, plus the fact that he comes from Smackdown to take on guys who aren't even in the World Title picture and loses...) or the World Heavyweight Champion after Vengeance will be drafted to Smackdown (The last week of picks is the week after Vengeance, convenient huh?).
Personally, I would love to see HHH walk out on the SmackDown rampway and have to face the fact that he's on the lower show. Second, if the WWE feels that HHH really is the big draw that he is, it seems a smart move putting him there to try and boost SmackDown to a higher level. Third, I just like Batista more, and I watch RAW more often than SmackDown.

For this draft, are they "picking out of a hat" or are the General Managers "choosing"?
((Edit))
Anyone who watched Lita and Edge's wedding, his hat and tie were so cool! Hehe, it amused me. blaugh
