Gomen does mean sorry. It's an informal version of the full word 'gomen-nasai'. Also, some people use another variation which is 'gomenne'. The basically all mean 'sorry' just various levels of formality.

"thank you very much" very politely in japanese is どうもありがとう "doumo arigatou" and since you know how to say it no need to do do pronunciation.
どもありがと "Thanks so much!" = domo arigato (no long "ou" sound)
ありがと、ありがとう "Thank you" = arigato(u)
ども "Thanks!" = domo

Domo arigatou gozaimasu. (Don't pronounce the "u" at the end of gozaimasu.)
