It may sound rediculous, but you have got to try these!
You'll need: 2 or 3 large Russet Potatos 1 large can of whole tomatoes 1 onion seasoning (basil, thyme, parsley) tomato juice chili powder
First you make a sauce: Stew 1 large can of whole tomatoes with some dried basil, thyme, and parsley. Add some chopped up onion to your taste. Then put this in a blender and get it nice and slushy.
Now cut your potatoes into half inch cubes and throw them into a nice soup pot. Add the sauce you just made, and also add a little tomato juice to start. Add Chili Powder to taste (I like my tacos spicy, so I add A LOT of chili powder, but if you don't like spicy food I imagine it would still taste good without so much.) Put a lid on the pot (or cover it with foil) and let it simmer for 15 minutes or so, stir it and add more tomatoe juice if it gets dry. Let simmer for another 15 minutes or so, stir, add extra tomatoe juice or seasonings if you think it's necessary. Continue in this manner until the chili powder's flavor has really come out, you have a nice thick sauce, and your potatoes have cooked. Now you have your stuffing!
This stuff is great in a good soft taco shell with a little mozzarella. Or, another great treat, Potato enchiladas! Just take your potato taco, put in a baking dish and add a can of store bought enchilada sauce.
