Fundamental demonic powers aren't universal between bloodlines, why should appearances be as well? There's enough to argue the point and speculation, but most are failing at the most obvious. It's a fictional story, the creator simple had his reasons for give each of the brothers a different image, no more or less.

however, as a full blooded yokai Sesshomaru can completely change his form. his true form is that giant floppy-eared dog, not his human form (altho arguably both could be considered just as real depending on what evidence you look at). also, how human a yokai looks depends on how powerful they are, with the most powerful ones being able to look the most human. arguably a hanyo, being half human, would have less power than most fullblood yokai so they'd have more nonhuman traits. IIRC there was a story, at least in the anime, that involved a hanyo whose father was a horse yokai. that character was oversized and had a horseish head because his father was a horse yokai. I also remember a bat hanyo that was more human-looking, but still had some traits that were atypical (such as hair and eye color, altho I can't remember if there was anything else right now).

Lord Sesshoumaru has a tail and Inuyasha has the ears. And Sesshoumaru can turn into a full dog demon, ears included. Inuyasha can't cuz he's a half-breed.
