You should have your character use a mask. Facial recodnition is used on security cameras now. Also, any place with something worth stealing will have to many cameras and back up systems to disable. They do that for liability reasons. Even if you disabled them, it would send a message to the athorities. That's one of the back up. You could over come that with a signal Jammer like the ones you see on Burn Notice, but then you would still have to deal with anyone watching the cameras directly.

Come to think of it, you should design a mock security system with some research. Then you can design the break in. Try to be realistic.
